Many "touristy" stores (such as in the hotels) are open on Christmas day, especially on Paradise Island. You can take a water taxi from the cruise docks.

Yes, I believe you can watch the groups practice. When you get off the cruise ship, go to the Welcome Centre at the Prince George Wharf (can't miss the big multi-colored building it sits in front of). They'll point you in the right direction. You may need a short cab ride to get to where the groups practice.
