I will be staying on Eleuthera in December and was wondering what I can expect the temperature and weather conditions to be?

It can get pretty cool. I only went to the beach once because it was to cool and very windy.

In December you can go barefoot, enjoy the sun, and be happy that you're not sitting somewhere in snow and ice. Early December is warmer. If you want to get in the water and stay for a long time, take a wetsuit top with you. The water is cool but you can swim. I would say the daytime temperatures are anywhere from 80 - 90. If it's overcast, it's cooler.

Water temps on the Caribbean side are mid 70's so if you're from a climate where the water only gets into the low to mid 60's like where we are then that's a treat.
