{"id":54235,"date":"2014-03-18T08:34:58","date_gmt":"2014-03-18T12:34:58","guid":{"rendered":"http:\/\/www.bahamasb2b.com\/news\/?p=54235"},"modified":"2014-03-26T09:02:27","modified_gmt":"2014-03-26T13:02:27","slug":"globe-trotting-chef-to-head-up-billfish-grill","status":"publish","type":"post","link":"https:\/\/www.bahamasb2b.com\/news\/2014\/03\/globe-trotting-chef-to-head-up-billfish-grill","title":{"rendered":"Globe-Trotting Chef To Head Up Billfish Grill"},"content":{"rendered":"<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-54240\" alt=\"palm-cay-billfish-restaurant\" src=\"https:\/\/www.bahamasb2b.com\/news\/wp-content\/uploads\/2014\/03\/palm-cay-billfish-restaurant.jpg\" width=\"550\" height=\"325\" \/><\/p>\n<p>A Bahamian chef who travelled the world studying exotic and cutting edge-cuisine has ended up in his own backyard as the new executive chef at Billfish Grill, the latest amenity to grace the fast-growing marina and beachfront community of Palm Cay.<\/p>\n<p>After cooking his way through Thailand and Japan, Chef Anthony Carey did a brief stint working in the exclusive New York vacation community The Hamptons before returning home to infuse local dishes with his new knowledge and skills.<\/p>\n<p>\u201cChef Anthony\u2019s craft is a fantastic representation on how to fuse traditional Bahamian flavours in a fresh, interesting way. His cooking style is a combination of Caribbean soul and Asian flair that ties perfectly with what we want Billfish dishes to be known for \u2013 clean, balanced, local,\u201d says owner Lise Russell.<\/p>\n<p>\u201cWe started with a basic menu and he worked his magic on it. It is a direct reflection of his palette and I think it really shines through every dish, every flavour pairing.\u201d<\/p>\n<p>A sneak preview reveals that Anthony\u2019s magic will include dishes such as Blackened Fish Tacos covered in creamy cilantro-lime aioli, and Sweet \u2018n Sticky Honey Tamarind Ribs.<br \/>\nBillfish Grill\u2019s set menu will be sprinkled with daily catch seafood specials, along with rotating desserts and revamped cocktails.<\/p>\n<p>The Palm Cay community already features marina access, 1,200 feet of pristine beaches, ocean-side yoga classes, pools and tennis courts, but homeowners have been eagerly anticipating the new restaurant \u2013 an interest driven by a Facebook contest to identify the new executive chef.<\/p>\n<p>Set to open in March, the tropical grill will seat 126 inside and al fresco.
