Five Vegan Breakfast Ideas

When going vegan, breakfast can be one of the most challenging things to replace. If you’re used to eating eggs every morning, switching to a plant-based lifestyle can leave you struggling for ideas to start your day.

1. Avocado Toast:
Okay, so I know this is like one of the most played out breakfasts of all time, but it’s such a hearty & balanced breakfast. Your toast can be your basic bread or you can get creative and use sweet potato “toast”, rice cakes or a bagel. Then just smash up a ripe avocado with a little salt, pepper and lemon juice. I like to top my avo toast with some nutritional yeast for my dose of B12 & pumpkin seeds for protein.

2. Tofu Scramble:
One of my favorite vegan breakfasts to date! Start with a block of extra firm tofu. Using your hands or a tofu press, gently squeeze out excess water. Heat some oil in a pan and crumbling the tofu with your hands into the pan. Season with whatever spices you like, I usually use paprika, garlic powder, nutritional yeast, turmeric for color and black salt (helps give an eggy flavor). Try adding chopped peppers, onions & potatoes. Tofu scrambles hold really well i nthe fridge, so they’re great for mealprep.

3. Smoothies:
Fresh fruit is a great way to jumpstart your gut in the morning. Try a fruity smoothie as your first meal of the day. I like to freeze bananas when they get a little spotty and use them as a base for my smoothies. Your breakfast smoothie can be made up of whatever fruits you like. Some of my favorites are berries, pineapple and mango! For extra oomph, add some vegan protein powder!

4. Pancakes:
Veganize pancake mix by subbing a brown banana or applesauce for the eggs! One of my favorite mixes is a GF version from Arrowhead Mills. For best results, mix your applesauce or banana with your wet ingredients in a blender to immulsify. Pimp your pancakes with vegan chocolate chips or top them with sliced strawberries and coconut whipped cream! I like to make a double batch of pancakes and save the rest for throughout the week. To heat up, just pop into the toaster!

5. Oatmeal:
Oats are one of the healthiest foods on the planet! Nutritious and super filling, oatmeal is an excellent way to start the day. Since most days are hot here in Miami, I like to prepare overnight oats, check out some ideas here. But if it’s more sweater weather for you, try a traditional hot oatmeal breakfast. Add fun mix-ins like nuts, seeds, dried or fresh fruit, maple syrup & cinnamon.
