  • 2 cups cooked corn kernels (fresh, frozen, or canned)
  • 1 cup diced bell peppers (assorted colors for variety)
  • 1 cup diced cucumber
  • 1/2 cup diced red onion
  • 1/2 cup chopped fresh cilantro
  • 1/4 cup crumbled feta cheese (optional)
  • 1/4 cup chopped roasted peanuts or almonds
  • Juice of 2 limes
  • 2 tablespoons olive oil
  • 1 teaspoon honey or maple syrup
