Tex-Mex Breakfast Burritos 

  1. Grab a pack of your favorite burrito-size tortilla.
  2. Spread a layer of refried beans on each tortilla.
  3. Add scrambled eggs or tofu.
  4. Top with salsa & avocado slices and roll-up.

Breakfast Casserole

  1. Bake a bag of tater-tots to package instructions & once done, use them to line a cast-iron skillet.
  2. Top with chopped spinach, tempeh, olives, and sundried tomato.
  3. Pour in beaten eggs or a container of JustEgg.
  4. Bake until completely set.

Sheet-pan Breakfast

  1. Prepare a sheet pan with parchment paper or a silicone mat.
  2. Arrange small cut potatoes, vegan sausages with sliced bell peppers & onions onto the pan.
  3. Spray with olive oil spray and season to taste. 
  4. Roast until veggies are cooked throughout.
